Is it possible to take a spell like Shillelagh and just add a plus one to the attack and damage modifier so my players dont have to remember to add the plus one themselves
Yes, depending on exactly what you need you might be able to create a homebrew magic item for the player to use, or create a custom action on the players character sheet. I have only dabbled in these tools but they are pretty extensive. Maybe someone else here or in the Homebrew and House Rules forum can give you more specific advise.

Custom action is what I'd use; this lets you set the ability score to Wisdom and set the correct die and damage type.
Creating a magic item won't give you the correct stats automatically so it just adds clutter to your homebrew.

I remain a free user only until my groups are done migrating from DDB, and if necessary D&D, after which I'm done. There are better systems owned by better companies out there.
