For comparison, here are a couple other monsters of the same challenge rating: Chimera, Foresworn, and Mammoth
HP is about on par with the others. Damage per round is roughly average. It has low AC comparitively, which is typical of Ooze monsters like this.
Depending on your party's composition, the damage resistance may prove to be an issue. If you have a small party that doesn't generate a lot of attacks, that damage reduction might be hard to get past. Might not be an issue if you have a larger party or optimized characters that can shell out a lot of damage.
Thematically, I might suggest making it vulnerable to Fire damage, or have any instance of fire damage give it some kind of debuff (reducing its reaction count by 1 maybe?). It is a Frost Gelatin after all, so it's fun to think of a Fireball melting the SOB.
