I have this idea for a Monk subclass. Essentially, it uses grapples a ton, and throws enemies around like a WWE wrestler. An idea I have for maybe a level 11 ability where it targets one creature it has grapples and creates a "fighting ring" pocket dimension where they can just beat the crap out of them, but it seems way too strong. How would I balance this? Also other ability ideas please?

Well WWE wrestlers deliberately do not actually hurt each other, so no a WWE-based class wouldn't be very effective. Even MMA and Karate rarely permanently injure their opponents. 2024 rules have added in a bunch of grappling stuff that works with monk. The details of different wrestling moves are difficult to simulate in a game like 5e that abstracts attacks and grappling to a single roll. You end up with pretty limited things to work with: unarmed strikes, grappling, throwing, shoving and improvised weapon attacks. Open Hand Monk plus the Grappler feat already cover all of these other than improvised attacks. So it's actually pretty hard to come up with enough features to fill out a whole subclass that don't end up either incredibly specific or repetitive.
