Reading through all the 5 and 5.5e necromancy spells their does not seem to be any spells that create anything more powerful than a wight or mummy how would one go about creating a beholder zombie or even weaker like ogre zombie or Minotaur skeleton
You cannot, however you can gain control of one using the Command Undead feature from the School of Necromancy.
