Inspiration must be declared when you make the roll so that the roll may be rolled with advantage.
I'm sure there is some sort of feat or class ability that adjusts the basic language. The game is full of rules exceptions baked in ... but barring specific language that says to do it differently ... declare ahead of time.
Sidekicks can be tricky. You don't need to declare actions, per se. Since it isn't a character that you control. Guiding her IC and giving commands IC is as close as it's going to get.
If you settle on a list of simple Rules-of-Engagement, that would be fine too.
I figured that Aria would follow Dorn's lead an try to protect him at all costs. But now that you guys have formed — for lack of a better term — an adventuring group ... she will act to defend the others as well.
[The standing ROE's could be something like ... always stay within a few paces of me ... keep yourself and others safe as best you can ... and attack the enemy whenever possible]
But yeah ... the NPC thing aside ... reactions in a PbP format can get weird.
For the folks with reactions, we could get a standing set of "If x occurs, then expect Y reaction."
Opportunity attacks are the most common ones, and since they don't come up often ... I'll just assume that folks would like to make them if presented with the opportunity. [That story might change if our PC's get a bunch of class abilities that grant different reactions ... because then they might not want to burn a reaction on something.]

The Ooze will forgo attack actions for this round, as it has been essentially bribed with the carcass of the ghoul. Let's say that the ooze will be occupied for 3 rounds after that
During that time will still be tracking things round-by-round.

I guess I just assumed that I am going to have to sit out the duration of this effect. One minute feels like forever in a fight, but it is quickly over once we leave combat. I wasn't sure if you were going to grant me another saving throw against it if I am brought from 0 to some health. If so, and you guys are able to give me 1 health, I have a second wind to bring me all the way back and I could help with this Ooze character.
I'm perfectly fine being the guy that falls in the fight though. I think it makes perfect sense for my character. I love that you saved me, it will be great for our bonding as a group and connect us into further work together. We have to have those tough moments to build up tension, character development and loyalty, right?
Last resort, I think Kneecap and Dorn both might get Lesser Restoration at next level up.

Agreed. Being down for 10 rounds can be an eternity during an encounter.
Re: Paralyzation. The ghoul's paralyze has this following caveat: The target can repeat the saving throw at the end of each of its turns, ending the effect on itself on a success.
The same attack that paralyzed Calim also dropped him to 0hp remaining ... which essentially removed him from the fight. After dropping to zero hp remaining, I simply lost track of the 'roll on each round to end the effect' portion of the ghoul's paralyze ability.
I apologize for not keeping track of / offering these saving throw opportunities.
Calim may roll as many as he missed (all DC10). If he passes one, he will be no longer paralyzed.
Do you want inspiration rolls to be called before the roll? I know that's RAW, but many play it after the roll too, so figured i'd ask.

Can aria employ her defender feature to impose disadvantage on the ghouls attack as a reaction?
She will certainly do so next time.

well I think it would be realistic to use her defender reaction whenever she is able. 🫡
