(Not really any rules on that I'm aware of. Giant spider have no movement restrictions on difficult surfaces, even upside down. With that said. I'm thinking that causing more than 1/2 damage to it would shake it up enough to knock it down.)
Thorum releases and strikes true with a flaming arrow causing 12 dmgtotal.
(No problem. I just wondered. I guess that's the advantage of being a giant spider! Is the spider on the ground within reach of my 25ft movement and 5ft melee reach, or would it still be too far away?)
They had just come past the fog of war on the map, which you can see a bit more of as a result of the web burning. I'll update that and get some figures in the map in a couple hours. They are 50' away right now.

Ok. So they're far enough away that they're not going to get into melee this round, so there's no point me readying an attack for when they get within range. In that case, Zarbof will pull out his crossbow and fire a shot at the spider up on the roof (Assuming that since I've got to draw the crossbow I wouldn't have time to set the bolt alight, so no fire damage).
Attack: 16 Damage: 3
Then I'll drop the crossbow to the floor in preparation for drawing my axe and shield next turn (Does that work? Trying to make use of my turn here without abusing the rules regarding switching weapons)
Yup. That works and with that damage half of the spiders legs come free from the ceiling. It dangles from 4 legs fo a moment before, not very gracefully, landing on the floor in a mostly upright position.

As Belialuins eyes start sparkling with chaotic energy he grins "Let the chaos consume you". Belialuin fires a Chaos Bolt at the Spider that Thprum hit.

Both spiders are going to move up to within 30" of Roger and Zarbof and shoot globs of webbing at them each. On hit: The target is restrained by webbing. As an action, the restrained target can make a DC 12 Strength check, bursting the webbing on a success. The webbing can also be attacked and destroyed.
Question: My AC is 18 with my shield and 16 without it. Given that I used my crossbow last turn and haven't yet drawn my axe, what does that mean for my shield? Presumably it was stowed to give me 2 hands for my crossbow, but not sure where it's at just now? Does the 17 hit me? (I'm fine with whatever ruling you give, just looking to clarify)
Yeah, both those attacks hit, although Roger was holding his action at ready. So Roger you can choose to try and Dodge that attack and I'll roll another die for disadvantage.

OOC: Are there rules about what happens to a creature when it takes damage whilst climbing? Is it possible to knock it off the ceiling?

Hit: 20

The chaos bolt lands with 8 Dmg further injuring that spider.
(Spiders are up... I'll post their attack soon when I'm back on my pc)
