When transforming a player into a creature, is it a straight one to one ratio of Level to CR? So a level 10 character can become a CR 10 creature (even though a CR 10 creature would wipe the floor with a level 10 adventurer)
If you turn a creature into another kind of creature, the new form can be any kind you choose whose challenge rating is equal to or less than the target’s (or its level, if the target doesn’t have a challenge rating).
This is exactly what happens when a character picks up Polymorph at level 7, and suddenly transforms themselves into a CR7 Giant Ape.
So follow up question. Provided you maintain concentration for the full hour, is the creature now what ever you turned it into forever? Like even if it's health would drop to zero, it just becomes a dying/dead version of what it was turned into? Enters an anti magic zone, no effect. People can still detect that it was transformed, but there is no way to turn it back (outside of another True polymorph spell)
OR does it just stay in that form until an effect that would normally cancel the spell (going to zero HP/ level 9 dispell/ anti magic zone/etc....) takes place?
The spell lasts for the duration, or until the target drops to 0 hit points or dies. If you concentrate on this spell for the full duration, the spell lasts until it is dispelled.
The target assumes the hit points of its new form, and when it reverts to its normal form, the creature returns to the number of hit points it had before it transformed. If it reverts as a result of dropping to 0 hit points, any excess damage carries over to its normal form.
Rearranging this into logical sequence:
The spell will last 1 hour, or until dispelled if concentration is maintained for the full hour, or until the target dies or drops to 0 hit points.
The creature will still revert back if it drops to 0 hit points. If it enters an anti-magic zone, the magical effect will be dispelled and it will revert back to its original form.

That is correct:

Yup. That is why polymorph is such a good spell.

So the key parts of the spell are:
The spell lasts for the duration, or until the target drops to 0 hit points or dies. If you concentrate on this spell for the full duration, the spell lasts until it is dispelled.
The target assumes the hit points of its new form, and when it reverts to its normal form, the creature returns to the number of hit points it had before it transformed. If it reverts as a result of dropping to 0 hit points, any excess damage carries over to its normal form.

This is how i read it at first. Thank you
