Proper new guy here. I've been playing for about 4 weeks. My wife and I are learning together and we're taking it in turns to play and DM for each other.
I may have missed it in the PHB, but I can't figure out levelling up. I'm using Beyond and my Fighter is Lv3, but his Fighter Lv is still 1 and his HP hasn't changed.
Does Class Level go up with your Character Level? Also, shouldn't Beyond be recording my HP as higher now that I'm Lv3 and not 1?
When you level up, you need to actually assign the level to a class. To the right of the class in the character builder, there's a drop-down menu for the level; you need to set that to 3 and then you'll be presented with your level-up options.
When using DDB there are a couple of things that can be confusing with leveling up and hit points. Leveling up can happen by XP or my Milestone. In either case, you have to manually edit your character and put it at the new level when the time comes. Then, like SagaTympana said, you see the level up options. For HP, they should automatically adjust when you level unless you've changed it to the manual setting. Only do this if you're going to roll for hit points after each level up. I don't recommend this option but some like it. The hit point and leveling options can be set on the Home tab of your character builder screen. The Class tab holds the leveling options and manual HP adjustments.
If the wife's character has met the requirements to advance and become a level 4 character, she can then chose what class that her character would take. When you multiclass, you get to choose which of your classes increases. The total level of your classes cannot exceed the total of your character levels. Something like this...
If you have your Advancement Type set to XP in the "Home" Tab of the character editor, you will find a "Manage XP" link near the top of the page in your "Class" Tab. Click that and you should receive a popup that is fairly user friendly. You can record your character XP here.
If, on the other hand, you would rather use Milestone Advancement, make sure that it is selected in the "Home" tab and forgo the previously described method of fiddling about with XP.

No. Your class levels should add up to your level, so a sorcerer 3, blood hunter 1 would be level four, because 3+1=4. Your wife is still at level three, and dndbeyond says that she cannot become level four yet, because she doesn't have enough xp.

There is a subtle, yet important difference between a [character's level] and the [class level of a character]. They can be easily juxtaposed. Dragon_Heir is most likely correct in the assessment that your characters' sheets on DDB are set to XP Advancement, not Milestone. See above quote for some advice on how to set your sheets to the desired Advancement type.

I think others covered the details, so I'll just say you can multiclass as early as level 2 (1 level in 2 classes). Like they said, your combined class levels equals your character level.

Yeah, I recommend using milestone leveling instead of XP.

How does this work with multiclass? My wife is a sorcerer and bloodhunter, and is Lv3. Sorcerer class is Lv2 and Blood Hunter is Lv1.
When my wife tries to put Sorcerer up to Lv3 the DDB app says she needs to be a level 4 character.
But, if she's a Lv3 character, wouldn't she have 2 levels to add to her classes?
Go into Edit Character, then click the Add A Class button. You can then choose an additional class.
