What is the race and class of the Mind Flayer Arcanist? It seems like Arcanist is a racial feature, but then would the class be a Wizard or Sorcerer? Just interested in technicalities of definitions and not how to play such an NPC.
NPC doesn't necessarily conform to class rules. If there is no written guidance you'll have to freestyle anything extra you might wanna flavor in.

It is apparently so hard to program Aberrant Mind and Clockwork Soul spell-swapping into dndbeyond they had to remake the game without it rather than implement it.
It doesn't have a class, but it casts wizard spells using Int as the casting stat. That puts it in the bucket with wizards, arcane tricksters and Eldritch Knights.
The lore provided seems to imply that a flayer might choose to use arcane magic and that their society will shun them if they do - so that implies it's not just an inherent feature. Perhaps they study like a wizard and are searching for greater power. No spellbook is mentioned, but a DM might give them one or decide they don't use them or that they use some psionic replacement.
Overall, you have a few clues saying "wizard", but combine that with "completely alien interdimensional psychic tentacle person" and the end result should still not be very near any other wizard NPC.
