I'm beginning to see why WotC didn't include height & weight descriptions for the two newest races ^^;;
It does help to have a standard framework to roll height & weight for typical members of a race, but neither are important for mechanical balance so there's nothing stopping you from choosing your own, with DM agreement.
Absolutely, anything goes with DM agreement. If a player wants to research ways to relate their homebrew to RAW, they are also at liberty to do so.

Yea this really, as long as you don't pick measurements that are really out there it won't break the system. And even if you do you have to actively exploit it for there to be an issue.
