I have a Gloom Stalker in my party and they are going up against a homebrewed Storm Giant Quintessent in a demiplanar laboratory (Ebberon). The lab is in dim light and the giant has spellcasting options, but it feels cheap on my part to have the giant know that the ranger is only invisible in dim light (hence the reason the ranger is invisible). My question is: should the giant's Wind Javelin automatically hit the ranger when he is invisible?
Wind Javelin. The giant coalesces wind into a javelin-like form and hurls it at a creature it can see within 600 feet of it. The javelin is considered a magic weapon and deals 19 (3d6 + 9) piercing damage to the target, striking unerringly. The javelin disappears after it hits.
Per the text of Wind Javelin, the giant has to be able to see the target. If the ranger is invisible, the giant can't see them, so it can't hurl the javelin at them.
Sorry, darkness not dim light, grammatical error on my part. I also wrote the text incorrectly in the stat block and kind of feel dumb for not just copy/pasting. I have corrected the text in the stat block and thank you both for catching my mistake.

The key wording is "striking unerringly".
SagaTympana is correct, the giant can't throw the javelin at an invisible target unless it can see the target, but a Storm Giant Quintessent has 60 foot truesight, so within 60 feet, the invisibility would be ignored.
Brian_Avery is also correct, the Gloom Stalker isn't invisible in dim light.

Is the giant actually using the laboratory?
I can't understand why any creature would choose to have disadvantage on perception checks relying on vision and only seeing things in shades of gray when working in a laboratory.
In darkness, they can't see well enough to tell two ingredients apart - is that the red powder or the blue one? Is that a green crystal or a purple one?
It seems to me that any creature with darkvision would have the laboratory at least dimly lit and a creature without darkvision would have it brightly lit because they NEED to see what they are doing. It has absolutely nothing to do with dealing with whatever creature might choose to enter the laboratory. It has to do with the NPC not wanting to blow themselves up in the laboratory because they can't see properly.
The only creature that would be comfortable in a laboratory in complete darkness would be a warlock with devils sight or any creature with devils sight that can see perfectly in complete darkness. Every other creature, PC or NPC would work in a lit laboratory in any world I created.
Edit: As pointed out :), creatures with truesight would also be fine in a darkened laboratory.
P.S. The Wind Javelin requires a creature the giant can see. If the room is dark then the gloomstalker ranger would be invisible to creatures using darkvision to try and see him so he could not be targeted. However, I hope my comments above make it clear that making the laboratory dimly lit has nothing to do with the giant knowing anything about the ranger. It would have to do with any creature that has any intelligence at all would light a laboratory to at least a level where they can clearly see what they are doing.
P.P.S. As already noted the gloomstalker ranger can only be invisible in complete darkness, Not dim light, and only if a creature is using darkvision to try and see them.

Quintessents have truesight, which is better than devil's sight.

Thanks for the clarification. I didn't realize the giant had true sight (and I missed the mention in your previous post).
So the giant can see fine within 60 feet with truesight but possibly just darkness beyond that. On the other hand, if the laboratory is larger than 60' and the giant needs to be able to see experiments that may be on the other side of the room then the giant is likely to have it lit so that they can see the entire laboratory at once.
I appreciate the input, it was a clerical error on my part that caused me to read the attack incorrectly. The error has since been rectified. For lore reasons: the giant abandoned this lab after it was attacked and moved to a more secure location. This lab is used purely as a vault.
I will share the stat block for the giant in question in case anyone is interested; the spells listed are just the spells he has prepared. If you want to change them around his spellbook contains every wizard spell except wish and clone.
TL/DR: Does Wind Javelin hit an invisible ranger.
