Can I, as a messenger, fully shape the dream of the target? Can I create/shape the conversations between the target and another creature or deity? Can I make another creature/deity talk to the target in his dreams?
The reason why I am asking this is because of how the dream spell is written.
"This spell shapes a creature's dreams"
I interpret this sentence that I can shape EVERYTHING in the targets dream.
"The messenger can also shape the environment of the dream, creating landscapes, objects, and other images"
This sentence does not say anything about conversations or speak/audio from other creatures/deities in the targets dream.
What is possible? What is the correct Interpretation of the spell?
Generally, spells do what they say they do. In your case, Dream allows for communication between sleeper and messenger, and the control of environmental components of the dream. Beyond that, looks like it falls into DM adjudication. If you/r DM considers auditory stimulus part of the environment, then it applies here as well.
Anything is possible with DM permission, and "correct" interpretation will vary, just like mileage.

I think audio-wise, you are pretty much limited to ambient environmental sounds and your voice, though it could potentially be altered.
The spell says nothing about how the messenger appears (other than monstrous or not). A little wiggle room can be expected, especially with the ability to freely create images being part of the spell.
It is a dream, rules are naturally fuzzy there. Work with your DM. Be creative. Have fun idea and they're likely to allow it.

It is apparently so hard to program Aberrant Mind and Clockwork Soul spell-swapping into dndbeyond they had to remake the game without it rather than implement it.
My interpretation of dream is that the caster can control most aspects of the dream sequence, but they can't affect how the target responds to the stimulus. So a caster could create a dreamscape which includes Lolth, and they could even script Lolth's lines in the dream, but they couldn't prevent the dreamer from responding with, "Lolth would never say those things; this is BS."
