What do you mean you can't seem to find anything about it? The feature text explains it quite clearly:
When you finish a long rest, you can summon a different primal beast. The new beast appears in an unoccupied space within 5 feet of you, and you choose its stat block and appearance. If you already have a beast from this feature, it vanishes when the new beast appears. The beast also vanishes if you die.
That was my assumption but I can't change it in D&D Beyond hence my question. I thought I would be free to change between the three but D&D Beyond won't let me or I am simply not finding the way to do it. It says summon different primal beast but not necessarily the type hence why I am asking.

You have to go into the character builder to change the selection.
Yea it is poorly coded so you need to make the choice in the builder. That makes it look like it is a "pick once and you're stuck" type of deal but it isn't, you are allowed to choose after every long rest.
