Dueling
When you are wielding a melee weapon in one hand and no other weapons, you gain a +2 bonus to damage rolls with that weapon.
So I read that as a one handed weapon. However, looking at movies like 'Crouching Tiger, Hidden Dragon' as an example of duelling, there is a scene where they are using some pretty heavy two handers.
As an aside, I don't think this fighting style scales well with end-game levels. Thoughts?
It scales about as well as any of the other fighting styles for their respective weapons. If I remember rightly, it's a bit better than Great Weapon Fighting in terms of damage (assuming a 2d6 weapon), though Two-Weapon Fighting is generally better than both until level 5. It should be noted that Great Weapon Fighting can be pretty good in situations where you have extra dice associated with an attack, like Divine Smite or hunter's mark, since it allows you to reroll 1's and 2's on any of those dice as well (despite what Sage Advice says). By the end game, a more useful and less damage-based fighting style is definitely something to consider.

I don't know exactly what the question is, but to use dueling style you need to have a weapon in one hand and none in the other (although you can use a shield). You also cannot use two-handed weapons to benefit from dueling style.
In my opinion it works best with spear, shield and PAM feat. The +2 damage is also applied to the attack with the blunt part of the weapon, which puts you toe-to-toe with more powerful weapons like the halberd. And you gain the +2 to the AC of the shield.
However, with sword and shield it also works well. It puts you toe-to-toe with heavy weapons, but you still have the +2 to AC.
It's one of the best fighting styles really, as long as you're not using a two-weapon build, GWM feat, or going ranged.

I think the main issue here is that the fighting style is poorly named. You have "Great Weapon", "Two-Weapon", "Thrown Weapon", "Unarmed" and "Archery". The "Dueling" fighting style isn't meant to be a style that benefits you in the classic one-on-one duel situations, it is meant to benefit you when using a one handed weapon (that is the group of weapon missing in the list).
