There doesn't seem to be a hard rule for it in the spell, so it's at least partly up to the DM. If Mending was used, I'd say the subject suffers no harm, assuming everything is put back. How effective adhesives or suchlike would be is up in the air.

If the creature is physically broken while petrified, it suffers from similar deformities if it reverts to its original state.
Most creatures would be dead without their heads. :)

Petrified is a condition, so you're still alive and still die if reduced to 0 hit points.
