I always imagined the spell ending to cause the cold damage rather than triggering multiple times as long as you have temporary hit points.

No matter how much damage you take, Armor of Agathys deals 5 points of cold damage (at 1st level) in response to a single attack taken.

Yes, if you have 2 temporary hit points left and get hit, that would trigger the 5 points of cold damage.
So if you take 5 damage, the armor would trigger and then it would be done with because those temporary hit points are gone.
