I am proficient in heavy armor. Does that mean if I don heavy armor, specifically plate armor, I still suffer the stealth disadvantage? Or does proficiency in heavy armor onot mean movement is not affected? I’m a bit confused.
Proficiency in the armor you are wearing means not being subject to the penalty of "you have disadvantage on any ability check, saving throw, or attack roll that involves Strength or Dexterity, and you can't cast spells."
If you wear armor that you lack proficiency with, you have disadvantage on any ability check, saving throw, or attack roll that involves Strength or Dexterity, and you can't cast spells.
The armor proficiency signifies you are accustomed to wearing the armor and move while wearing it, but it does not decreases the noise generated by said armor when moving by a sufficient amount as to nullify the Stealth disadvantage.

This is pretty much explained in the Mithral entry you posted above. Stating that the Mithral removes the stealth penalty that any plate armour would normally carry. As an item it would be pretty useless if your proficiency had already negated it!
Proficiency when it comes to armour just means that you're comfortable with their use, in the case of armour it essentially means your character can move comfortably but it doesn't necessarily mean that you'll be able to tiptoe perfectly in a big clanking suit of armour just because you know how to wear it and can move reasonably well in it.

For armor, it's as described above. You have Disadvantage on a whole bunch of different rolls. The "disadvantage on Stealth" property for Heavy Armor and some Medium Armor is a function of that type of armor, not your skill in wearing it(just like the Str requirement for some Heavy Armor). Think about it, Chain Mail and Plate aren't exactly stealthy :) The other issue is for spellcasters. If you're wearing armor you aren't proficient in, you can't cast spells. But the proficiency doesn't have to come from your spellcasting class, so if you're a Wizard who took a level of Fighter, you can cast while wearing Light/Medium armor(Heavy armor too if you started as a Level 1 Fighter).
For weapons, your proficiency lets you add your proficiency bonus to attack rolls, that's the only mechanical difference I'm aware of.

So since I’m proficient, the disadvantage goes away completely, correct? So the adamantine armor is a better choice?
