Hello, I am playing a Dragonborn Monk (obviously) and I am wondering if it would count as a monk weapon or unarmed strike so that i can us it as a bonus action or make an unarmed strike as a bonus action on top of breath
“When you use the Attack action with an unarmed strike or a monk weapon on your turn, you can make one unarmed strike as a bonus action. For example, if you take the Attack action and attack with a quarterstaff, you can also make an unarmed strike as a bonus action, assuming you haven't already taken a bonus action this turn.”
Instead of using a weapon to make a melee weapon attack, you can use an unarmed strike: a punch, kick, head-butt, or similar forceful blow (none of which count as weapons).
Martial Arts
At 1st level, your practice of martial arts gives you mastery of combat styles that use unarmed strikes and monk weapons, which are shortswords and any simple melee weapons that don’t have the two-handed or heavy property.
Breath Weapon: Now functions similarly to what is in Fizban’s Treasury of Dragons. It can be used as part of an Attack action, has uses equal to your Proficiency Bonus, and damage scales from 1d10 up to 4d10 at level 17.
Using the current PHB dragonborn the Breath Weapon is an independent Action. Fizban’s and the update make it part of the Attack Action, though as things stand until you have Extra Attack you can’t combine it with Martial Arts or FoB since as previously noted you won’t be meeting the prerequisite conditions using only the Breath Weapon.

The main problem I see is that when you use your breath, you're not using the Attack action, but a different one: Breath Weapon
In any case, I don't think Breath Weapon can be considered an unarmed strike or a monk weapon:
PS. In the 2024 PHB, the Breath Weapon will work differently:
A Dragonborn's Breath Weapon is not a simple melee weapon classified as monk weapon that you use the Attack action with.
