The creature inside of the Resilient Sphere can not be targetted, however nothing protects the sphere itself from being dispelled, so if the goal is to maintain the sphere then a caster can still dispel it but until that has been done then there is no way to target a creature through it.
For a high level caster (necessary to cast Contingency), this would be sufficient. But...
They cannot change the target of the Dispel Magic. The contingency only goes off if they target me, so the entire Dispel Magic fails that round. If they cast other Dispel Magics AFTERWARDS, then those would destroy the Otiluke.
Yeah, that works. And you don't have to be aware of the trigger happening; it simply happens. That's part of the usefulness of Contingency, but also one of its weaknesses, as you can't force it NOT to trigger when the valid trigger comes up.
Note about this that I realized with my own wizard using RS to protect himself from what would otherwise be a lethal or knockout blow: If you're in a state where you can't concentrate (such as being incapacitated) when it triggers, it still triggers but is lost instantly because you can't concentrate on it. Contingency doesn't remove concentration requirements. It also forces you out of other concentration spells.

Am I missing something or will this protect against a Dispel Magic:
This protects against the Dispel Magic a spells can not go through it.
If that version does not work, would this version (misquoted from Counterspell):
The creature inside of the Resilient Sphere can not be targetted, however nothing protects the sphere itself from being dispelled, so if the goal is to maintain the sphere then a caster can still dispel it but until that has been done then there is no way to target a creature through it.
