Ooze isn't a race/species, but a creature type (i.e., a category containing multiple species). Maybe you mean Plasmoid, a playable ooze species from the Spelljammer book?
If so: Plasmoids have this ability to squeeze through very tiny gaps, but only if they're not wearing or carrying anything that wouldn't fit on its own. If you want to be able to make use of that, you're probably not going to want to be carrying much gear. In which case, you might consider playing a Monk, since they have much less need for armor or weapons than other classes do.
Can I use a custom race? Because my character’s abilities are tied to the slime race itself…
Maybe? You probably want to check with your DM about that. There's no official playable species called "ooze" or "slime", so it might be a homebrew thing your DM developed?
If this is just for you and for fun, then the world's your oyster. Do whatever you want.
If this is something you plan on actually bringing to a table, then you 100% must have a conversation with your DM about this. Creating characters based off of monsters that you actually plan to play is not something you do without DM approval and guidance.
I want to create a character with the race - Ooze/Slime. Can you explain what classes and subclasses might be suitable for it?

No, I was just thinking that you could create a character based on a creature, not a sentient race (human, elf, dwarf).
