Can you "stack" the investiture spells over each other? Like can you cast the fire one on yourself and cast a different one in the next turn? (They each have 10 min duration)
Or like a druid casts one on himself and immediately after that a sorcerer casts a different one on him using the extended magic metamagic?
(And then the druid uses wild shape to shapeshifts into a giant eagle of fire and lightning, but that's a story for another day)

No. It requires Concentration, so as soon as you cast the second one, the first one will end.

No. You can only cast the Investiture spells on yourself (Target: Self). There is no metamagic that allows for a Sorcerer to cast a spell with a target of Self on another target.
if i were to say, have a glyph of warding or contingency spell to cast one for me and concentrate, would they stack?
You still can’t concentrate on both. The first one would end the moment the second one is cast. You would have to find a means to remove the concentration aspect or widen the targeting options

Sorry I was mistaken and thought the "distant spell" metamagic applied to self and not only "touch"
