Correct. Sorcerers swap their spells on level up and even then only one (check the language in Tarod's second quote). Cantrips are also "known = prepared" and you can swap one out on level up.
For example, let's say you level up from 2 to 3. You gain a level so you can now learn two new spells (going from 4 known to 6 known, as per the table) which will always be prepared. Since the spell slot you gained is a level 2 slot, the spells you learn can be either level 1 or level 2. Additionally, you can swap one of your known level 1 spells with a different level 1 spell or a level 2 spell, if you wish. Finally, you can swap a cantrip you know for a different cantrip.
So, going from level 2 to 3, you can potentially go from knowing four level 1 spells to knowing three level 1 spells and three level 2 spells.
Note that the only interaction spells slots have with your known spells is to limit the maximum level you can learn/prepare. By the time you level up to 20, you could know/prepare five level 9 spells (though you'd only be able to cast one per LR, as you will only ever have one level 9 spell slot).
Under the 2014 Rules-As-Written, you couldn't swap out Sorcerer Cantrips at all (the section about swapping out spells at all was under the heading "Spells Known of 1st Level and Higher" for all classes that used the "Known Spells" terminology, and the spell "must be of a level for which you have Spell Slots") untilTasha's Cauldron of Everything added the Sorcerous Versatility Optional Class Feature to allow Sorcerers to swap out a Sorcerer Cantrip gained from the Sorcerer Spellcasting Feature at Sorcerer-Class ASI levels.
(2014 Abberant Mind appears to be an exception; it's the only 2014 subclass I have access to that grants a Cantrip from something other than the Spellcasting Feature, and the Psionic Spells feature allows swapping out of one of the spells granted by it at each level up)

Yeah, I was using the 2024 for the explanations. I have a problem not asking about the edition, or just assuming 2024 by default.
I'd like to clarify then that the answer to the OP's first question is the same when using the 2014 Sorcerer: "you don't add more spells to your list when using Font of Magic".
Good point. Currently playing 2014. This site is convenient, but I find it becoming more difficult to differentiate whether the info presented is 2014 or 2024. So I'm just going back to books more and more. I guess that it is to be expected that they would push the new stuff.

Yes, you're right, you don't add more spells to your list using that feature.
