If a weapon has 2 dice damage, I roll both dice not just one?
Yes, this applies to all of the weapon's damage dice.
If you're using a 2d6 weapon like a greatsword, you would roll two separate sets of two six-sided dice, and then choose which set to actually use (presumably the one with the higher total).
