I attack with a rapier then because of the Nick property I attack with the dagger. My bonus action is an attack with the Dancing weapon .
Is that correct?
No. Nick modifies the extra attack you get from the Light property, so both weapons need to be Light. The Rapier is not. This would work if you were using a Shortsword (or some other Light weapon) instead of the Rapier, though.
Is that correct? Do I need nick mastery to be able to use Nick?
Yeah, there are weapon "properties" such as light, finesse, two-handed, reach, etc which are just automatically applicable the moment anyone picks up the weapon.
Then there are weapon "masteries" which are things a person can do with a weapon IF THEY HAVE THE TRAINING. So quarterstaff has the "topple" weapon mastery, but only people who have access to learn the quarterstaff-topple mastery can try to topple with a quarterstaff.
If you pick up a dagger, it has the "light" property which allows anyone to make that light attack.
But
No one can use the dagger's nick mastery unless they learn how to master that ability. Martial characters get various weapon masteries over time. If your class gets 2, then you have to select 2 specific weapons and their masteries, and then you can make use of them.

I have three weapons:
I attack with a rapier then because of the Nick property I attack with the dagger. My bonus action is an attack with the Dancing weapon .

On the 4th turn when the dancing weapon comes back, Can I use the rapier/dagger combo then sheath the dagger, and catch the dancing weapon?
No. Nick modifies the extra attack you get from the Light property, so both weapons need to be Light. The Rapier is not. This would work if you were using a Shortsword (or some other Light weapon) instead of the Rapier, though.
Yes. You can't use class features you don't have.
I don't see why not (again assuming you use a Light weapon instead of the Rapier).
