Since the Nick property has a "limiter" stating that " You can make this extra attack only once per turn." if the following situation arises:
Scimitar[attack action] -> Light property procs -> Nick procs -> Shortsword attack[attack action due to Nick] -> ????
Now the Shortsword should proc it's properties and mastery too. The property obliviously is Light, the player should be entitled to make an extra attack with a bonus action with a different light weapon, which could be the scimitar. Due to the fact that Nick spared the BA originally allowing to hit with shortsword.
Given this premise, now which of the following outcomes is correct?
1-> Scimitar[bonus action due to light] 2-> No extra attack from light property due to the Nick "limiting" which applies to other light weapon property.

What extra attack is referred to by "this extra attack"? It must be the extra attack of the light property. So you can't take the Light extra attack as a bonus action, because Nick restricted you when you took it the first time.
(This is why Dual Wielder is useful for light weapon fighters, because its bonus action attack is not the extra attack of the light property.)
I guess we'll have to agree to disagree. I think you're making a mountain out of a molehill, here. Yes it's a weird silly build, but it doesn't break the game, and I don't think there's a good case for preventing a player from using it if they want to commit to it, especially considering that there are builds out there that are less convoluted and more OP.

To explain the Nick property, we should briefly cover that being able to attack twice while dual-wielding Light weapons has subtly changed in the 2024 Player’s Handbook. Instead of being covered under Melee Attacks, the rules for dual-wielding Light weapons are covered under the Light weapon property.
It still functions the same way: When you make an attack with a weapon that has the Light property, you can use a Bonus Action to make one attack with a different Light weapon you’re wielding.
The Nick mastery property allows you to make the additional attack you receive from wielding two Light weapons as part of the initial attack action.
Keep in mind that this doesn’t mean you can make a third attack as a Bonus Action, as the Light property specifies you only get one extra attack. But, while it may not pump your damage, this frees up your Bonus Action to use class/species abilities, such as the Rogue’s Cunning Action, while still getting an additional attack in.
