With Nick Mastery and/or Thrown weapons, It's possible to do;
Attack with Scimitar and unequip it [Attack action]
Unequip Mace [Free Object Interaction]
Draw Dagger, throw it and equip Greatsword [Nick Mastery]
I am pretty sure that drawing / equipping a dagger counts as your weapon equip/unequip for that attack so you could not also equip a Greatsword during that attack. Or am I wrong?

There's an inherent draw as part of throwing a weapon. Since it's from a different source than the draw/stow for attacking, on can, by RAW, use both.
("Equip great sword" is only due to Nick Mastery in that it gives you another attack as part of your attack action, and not a separate draw of its own.)
EDIT: So drawing a thrown weapon does NOT count as equipping / unequipping as part of that attack... The assumption is that the drawing act mentioned under the thrown property is separate from the equip/unequip that is part of the attack... Wow there is even more juggling possible...

If a weapon has the Thrown property, you can throw the weapon to make a ranged attack, and you can draw that weapon as part of the attack. If the weapon is a Melee weapon, use the same ability modifier for the attack and damage rolls that you use for a melee attack with that weapon.

- The Attack action lets you equip or unequip one weapon once per attack as part of the Attack action. So if you have more than one attack, you can take advantage of that. - The Ammunition property lets you draw the ammunition as part of the attack itself (you need a free hand to load a one-handed weapon). This isn't necessarily part of the Attack action, so it can also happen when making an attack as a Bonus Action or Reaction. - The Thrown property lets you draw the weapon you're using for a ranged attack as part of the attack itself. And again, not necessarily as part of the Attack action.
In addition to the previous interactions:
- The Dual Wielder feat lets you draw or stow two weapons that lack the Two-Handed property when you would normally be able to draw or stow only one. - Following the Time-Limited Object Interactions and Interacting with Things rules, you can interact with one object or feature of the environment for free, during either your move or action. The interaction could be drawing or stowing a weapon. If you want to interact with a second object, you need to take the Utilize action.
