Tarrasque has resistance to Piercing damage, so it would deal half the normal damage. An Adamantine Weapon doesn't have any inherent ability to overcome damage resistance.
A mimic doesn't actually become the item it is mimicking. From mimic page: "Imitative Predators. Mimics can alter their outward texture to resemblewood, stone, and other basic materials, and they have evolved to assume the appearance of objects that other creatures are likely to come into contact with." That's from the 5e Legacy version. For 5.5e, it states: "Shape-Shift. The mimic shape-shifts to resemblea Medium or Small object while retaining its game statistics" So in either case, it does not actually become an Adamantine Ballista Bolt.
Secondly, "Liquid Nitrogen" is not an "object". Therefore the mimic cannot resemble Liquid Nitrogen at all. And even if it did, it wouldn't have the properties of Liquid Nitrogen, it would just appear as a liquid that immediately sublimates into a gas. So...the whole "mimic one-shotting a Tarrasque" is not going to work, at least not this way.

our alchemist is a homebrew so i have a few potions that allow the mimic to perfectly mimic a substance and have all the properties of said substance. another potion allowing it to turn into any state of matter.

If it can take on the properties of any substance and state of matter, then I bet turning it into neutron star material would probably one-shot the tarrasque.
