How would you rule on the spell Catapult from XGtE? I was thinking that the Catapulted object would get to the rakshasa and then drop harmlessly at it’s feet. Or would the object take damage but not the rakshasa? Or would the object just automatically miss?
How would you rule a character trying to use Mage Hand Legerdemain to pick its pocket?
Personally, I'd say it dissipates once the hand gets near it.
I disagree. Dissipating when the hand gets near is quite generous to the rakshasa. I agree that a mage hand couldn't slap/push it, but only the rakshasa is immune to magic. Its clothing is another matter entirely. Also, just because it's immune doesn't mean it dispells magic.

I just read through the rakshasa description again. This creature basically gets to break all the rules. They are also immune to nonmagical bludgeoning, piercing, and slashing damage so even this idea doesn't work.
I don't mind that something like the rakshasa exists, but I feel like it wasn't fully thought through. It's kind of nice because it gives martials the opportunity to shine. But, I don't know how a warlock could even contribute in a fight with a rakshasa. Feeling like you can't do anything useful in a fight isn't a good feeling. Maybe that's just the white room scenario though and in an actual fight you would think of something.

Are they immune to the effects of spells (6th or below) even if they were not cast directly on the rakshasha, such as darkness or an illusion?
Yes, the point of origin of the spell does not matter.

That’s a DM ruling. I’d say that it passes by and keeps moving if I was the DM.
