Another question: Can the Hexblade Warlock who is multiclassed with Monk use the 1st level Hex warrior ability on his unarmed strikes?

If you mean the Hex Warrior feature, it would not work, RAW, as Hex Warrior specifically needs a weapon, and Unarmed Strikes are not weapons (see Sage Advice compendium, "Can a rogue/monk use Sneak Attack with unarmed strikes?" question for the ruling on unarmed strikes not being considered weapons to fulfill class features with).

I'm usually one for houseruling to let things work if they aren't overpowered. However...the Hexblade's whole thing is magical weapons, right? It's a force that manifests in sentient weapons. It's whole schtick is things that are not your fists. So you have a power that gives you a benefit when you are using a thing that you hold in your hand. I'd actually be inclined to say no on that one.
Easy fix: create a homebrew Monk weapon made of hardened leather bandages to wrap around the fists and feet (with bits of metal layered on top of strategica points, if you want): this gives the Hexblade features something to "latch" on and keeps the overall looks and feels of Monk combat untouched.

This is one of those oddities because a Monk's unarmed strikes are considered "melee weapon attacks" but they are not actual weapons.
That oddity only comes from unfortunate naming. There are two orthogonal ways of classifying attacks, each with two categories: ranged/melee, weapon/spell. If "weapon" had been named "physical" instead, then unarmed strikes would be "physical melee attacks", as would be longsword attacks, while bows and slings would be "physical ranged attacks". Fire bolts, Eldritch Blasts, Chromatic Orbs, etc, would be "spell ranged attacks", while Shocking Grasp and Inflict Wounds would be "spell melee attacks". It wouldn't be as confusing then. "Weapon attacks" would be any of those, if they were inflicted with a weapon, while "physical weapon melee attacks" would be longsword attacks, flail attacks, etc, but not unarmed strikes. FWIW, in the books those are usually called "attacks with a weapon" and usually not "weapon attacks".

No. Unarmed strikes are not a weapon.
