The spells says "One item". The casting time is 1 minute, but the effect is instantaneous. You learn whatever you learn, about one item, in an instant when you finish casting, then the spell is over.
If it's off camera stuff, I don't really bother with how many items, however. But an important casting of it, yeah. Just one item.

See I was interpreting it one item at a time but that makes WAY more sense that it's restricted to 1 item as a 1 minute ritual cast.

If you're casting it as a ritual it's 11 minutes. 10 minutes plus the 1 minute casting time.
