Never played an actual game before but I have become a tiny bit obsessed with creating characters. I created a character using the character builder and made a Dragonborn Draconic Sorcerer (his name is Kajraad Redscale). With the Draconic Resilience class feature, Kajraad’s AC is 13+DEX. I then wanted to add a few levels of Barbarian to make Kajraad a beefy boi. When I added the levels of Barbarian, his AC changed to 10+CON+DEX, instead of 13+CON+DEX like I thought it would. I looked up the Multiclassing rules and it states that “If you already have the Unarmored Defense feature, you can't gain it again from another class.” However, the Draconic Resistance is not Unarmored Defense. If I made a Monk/Barbarian, it would be overboard to add CON and DEX to AC. Draconic Resilience (and the Dragon Hide Feat) does not add an ability score to AC and only changes the BASE AC to 13. Finally at my question: would it be within reason to calculate Kajraad’s AC as 13+CON+DEX?
Some spells and class features give you a different way to calculate your AC. If you have multiple features that give you different ways to calculate your AC, you choose which one to use.
Basically, anything that starts with a number and might add anything after doesn't stack. You choose your best option from the calculations available. Things that give a plus to AC can stack unless specifically mentioned that they can't.
Pay close attention to what the rules say, and what they don't say. The rule for a Barbarian's Unarmored Defense says: "While you are not wearing any armor, your Armor Class equals 10 + your Dexterity modifier + your Constitution modifier. You can use a shield and still gain this benefit." It does NOT say, "While you are not wearing any armor, you can add your Constitution modifier to your Armor Class. You can use a shield and still gain this benefit."
There are certain rules/spells/abilities/etc that let you calculate what your Armor Class "is", or "is equal to". This includes Natural Armor, Unarmored Defense, Mage Armor etc. as well as simply wearing armor. None of these stack with each other. If you have access to more than one, you pick one. There are other rules/spells/etc that offer a "bonus" to your Armor Class. These stack with your base Armor Class calculation as well as anything else that offers a bonus, with the notable exception that you cannot benefit from two instances of the same bonus. For example, if two people cast Shield Of Faith on you at the same time, you still only get a +2 bonus, not a +4.

You can't do that. By the rules different AC calculations do not stack. You must choose one or the other.
