According to the PHB and DMG class levels end at 20th, and I'm more used to previous editions where there wasn't such a thing as a level cap, but you can gain 'Epic Boons' for 30K exp. each.
Could Epic Boons be used to simulate class features for a multi-class character who has reached 20th level?
I.E. A 16th level Druid, 4th level Ranger, taking an epic boon to gain Timeless Body which would normally only be available for an 18th level Druid, and so on?
That is one way of going about it, actually my level 20 ranger even though he started as a hunter is now gaining boons that are the horizon walker features since hes now a planeswalker. If you wanted more example I believe the DMG has more examples that you can use as well.
I think it would be cool to have an expanded XP table for maybe up to 30th level, and then require multiclassing at those ridiculously high levels. A lot of tables would have to be expanded (like building encounters), and playing wizard would be weird. This way, progression continues the same way as before 20th level. It also allows mild multiclassers to get the capstones for their primary class, like the original Druid 16 Ranger 4 actually becoming a Druid 18 Ranger 4. Maybe they could get boons instead of feats past 20th level total.
WotC would have to make rules for all the possible class interaction over level 20. Until then, they probably wont be an option on DDB as their tools are built around the rules.
No they wouldn't, the individual class levels wouldn't go over lvl 20; you'd need to multiclass. For example, if I'm a level 20 Fighter - Champion, and I get to level 21, I might multiclass into Barbarian or Paladin.
And spellcasting, xp, encounter difficulty, and proficiency bonus tables would need to be expanded.

All I found was the epic boons.
With DM's permission, you can make epic boons whatever you want.
