Hello RebelGekko! You get access to either a feat or ability score improvement at the levels noted on the Fighter class table, which you can see on this page. At level 8, you will have had three opportunities to select either an ability score increase, or a feat. You get that at level 4, level 6 and level 8 of your class. Hope that helps!
Feats are a little complicated because they're not a dedicated mechanic that all characters automatically get... some DM's don't even allow feats at all. So in the character table feats aren't mentioned... you have to dig a bit into the descriptions to see that you can optionally take a feat instead of an ability score increase.
so I have a level 8 Eldritch knight fighter and I’m new to dnd so I was wondering how many feats I can choose

Fighters also get an ASI as level 6, so you will have 3 opportunities at level 8.
Just remember you have to choose between a feat or increased stats.
Thank you I guess I just wasn’t looking in the right spot

Yeah feats (along with multiclassing) are technically optional rules.
