If you have a longsword deals 1d8 basic damage and also +1d8 fire damage.. When you score a critical hit do you then roll 4D8 (2 for basic damage and 2 for fire damage), or do you roll 3D8 (2 for basic damage and 1 for the extra fire damage)?
I hope someone can help me answer that question :)
Whenever you score a critical hit you double all dice rolled. So if you have a magical Flame Tongue longsword that deals an extra 2d6 fire damage then your attack would deal 2d8/2d10 ( Versatile changes this damage die) slashing damage +4d6 fire damage + your STR modifier on a critical hit.
Here is a link to the Critical Hits rule in the PHB. Biggest thing to note is that only dice gets doubled on a critical hit, the damage from your ability modifier doesn't increase with a critical.
There is probably some potential for nuanced exceptions based on wording, but all instances I've seen just say an attack does additional damage. If the attack is critical, than its damage dice (including additional) are doubled.

The nuanced exceptions are typically in the vein of adding damage dice which are not doubled. AFAIK, the only time that comes up is when a feature allows you to add damage dice to a damage roll with the prerequisite of the attack already being a critical hit. I.e., Brutal Critical from Barbarian, Savage Attacks from Half-Orc, etc.

When you score a critical hit, you get to roll extra dice for the attack’s damage against the target. Roll all of the attack’s damage dice twice and add them together. Then add any relevant modifiers as normal. To speed up play, you can roll all the damage dice at once.
Note that it says the "attacks" damage, not the "weapons" damage.

"While the sword is ablaze, it deals an extra 2d6 fire damage to any target it hits."
The Flame Tongue is adding damage dice to the attack. Therefore, those dice are also doubled. Your note that "sneak attack isn't magical" is entirely irrelevant, because the text from Critical Hits doesn't differentiate where the extra dice come from.
If you could somehow attack with a weapon that added bonus elemental dice, had sneak attack, and fired off some divine smite, on a crit all of those dice would be doubled. The only that would not be doubled would be your stat bonus.

Paladin/Rogue multi with a Flame Tongue Shortsword would do just that. Get Booming Blade in there somewhere and that works too.

No this is wrong. All dice is doubled on a crit, it doesn't matter if it is magical or elemental or normal "same type as the weapon" damage.
