If I'm in combat with my assassin and I win the battle initiative so I go first over everybody and I hit a monster let's say a goblin with an arrow and because it's the first round I make my attack and I hit him that means my assassinate pops off and it becomes a critical but what if I roll a D20. And its a nat.20 that would become a critical anyway would that turn into a double critical or would you just count one critical
Assassin is actually kind of bad IMO because it requires the entire party to be stealthy in order to get those crits (which only occur on turn one anyway and no extra attack).
And there is no such thing as double crit. A nat 20 attack roll is a crit and assassinate is a crit and a nat 20 on assassinate is a crit.

No double criticals.
Just need to make sure that you understand the assassinate ability correctly.
if you "go first over everybody", then the ability lets you have advantage on the attack roll.
It is only a auto crit if you hit and the enemy is surprised.
If they know you were coming (and not surprised), even you are first in combat, you only get the advantage, not the auto crit.
and yes, only 1 critical per attack.
