Tried adding a new class as paladin with base strength at 8 (multiclass prereqs turned on ofc) with gauntlets of ogre power and did not have any issues - is this mechanically correct? From what I've heard this shouldn't be allowed.

It's not supposed to happen, perhaps there is a weak point in the code there where it's only referencing the stat from the sheet instead of checking where the stat is coming from. They've got it broken down enough that it should be able to distinguish.

I would post this in the Bug Report forum, this definitely shouldn't be happening. Multiclassing is supposed to be based on your natural ability scores, not ones conditioned on the active use of a magic item, or any temporary spells/effects. Otherwise anyone who wanted could grab a Wizard level by borrowing a Headband Of Intellect just before leveling up, then give it back after.
