As stated many times, an Unseen Servant can carry 30lbs, but how high can it lift that weight? It can't fly (as it has no stated fly speed), but nowhere can I find how high it can lift that 30lbs and still move at 15ft per round.
Scenario: Tome Warlock Grung is a small little guy and wants his Unseen Servant to carry him for an hour. The Grung is less than 30lbs (even with gear for this example). So how high can the Unseen Servant carry Mr Grung?
Inch off the floor? 4 feet off the floor? A medium size servant can carry 30lbs at a 4 foot height. Is there a height limit?
No footsteps / tracks, 15ft movement speed, cool floating Grung with movement direction changes at will. Pair that with a Tenzor Floating disk and you could move a few other party members across terrain without leaving tracks for an hour.
It's the size of a medium creature, so I would say it can raise something 7-8 feet up at most. I would assume it can't walk over water, otherwise the spell would say so.
I'd say we can assume it can lift things at least 5 feet high. Any higher would be by the generosity of the DM.
As for carrying over water, it doesn't have a fly speed and doesn't mention any water walking feature, but also doesn't mention it can't swim. So we can assume the same swim rules apply as normal (half speed), and can keep you floating at surface level above a 5×5×5 water displacement.
The servant can perform simple tasks that a human servant could do
For this, I would assume a 6ft tall "human" with an additional ~2ft of reach, so I'd say it could carry something at ~8ft. Since it has a strength score of 2, it wouldn't be able to "jump" to get any additional lift.
Treat it like a formless simple human.

Can it Carry something over water?

It doesn't walk at all since it is a force. No form, No mass, it just moves.
I'd say we can assume it can lift things at least 5 feet high. Any higher would be by the generosity of the DM.
