Weren’t Centaurs and Minotaurs Large, and Fairies Tiny? Why did this change? What would the requirements for you size changing be outside of a magical spell effect designed to do so? If it is Mass, how come Warforged are Medium? Also, can one of you leave an outline of this 3.5 table.

"OP" is just internet shorthand for "Original Poster"... as in the person who started the thread. Anyway, Centaurs and Minotaurs as Monsters are Large, but the playable Race version of them are considered Medium. Keep in mind that both the playable Centaur and Minotaur are from the "Mythic Odyssey of Theros" expansion, which is set on a different realm than the default 5e setting of the Forgotten Realms. Faerie were created later as a playable race and in general is designed with game balance prioritized over lore.
Anyway, the game seems to deliberately avoid giving specific measurements and limitations for the difference in size. It's up to the DM to determine a creature's size if it's not already laid out in an existing stat block.

There are none, really. A creature is whatever Size it's been given by whoever made the creature. Regardless of its detailed measurements. 😅
