I see in that Wiki's info that there were two 2e Adventures that took place there (Fires of Zatal & Endless Armies), do any of you know of any 5e sourcebooks that has more information on Mazitca?

Sing of Bahamut, the Platinum, molding the shape of the mountains and rivers; Sing too of Chromatic Tiamat, painting all over the infinite canvas. WC1 is, of course, The Maztica Campaign Guide. It has currently been updated to MZC1, absorbing details previous presented in the Articles series.
TWC2 - Lopango, Land of the Sacred Sun is a Maztica subsetting which covers the distinctly Incan-flavored realm that lies far to the south of Maztica.
TWC3 - Claw & Sting: The Scorpionfolk of the True World Underdark describes the titular race, presented here as the major Underdark-dwelling threat of Maztica and its neighboring realms, in place of the traditional Drow.
TWC4 - Esmeralda: Island of Revolution & Supernatural Threats is another Maztican subsetting, this time taking place on an island off of the western coast of Maztica. Whereas Maztica itself has been presented as throwing off its Faerunian invaders, restoring it to a purer and more interesting "pre-Conquistador South America" feel, Esmeralda now exists as a way to explore that post-Conquistador South America feel.
The last of these books are TWC6 - True World Bestiary II (Monsters A-H) and TWC7 - True World Bestiary III (Monsters I-Z), which are, obviously, bestiary expansions above the ones found in the Maztica Campaign Guide. In the 2nd wave these have been folded together into a single product; MZS1 - Monsters of Maztica.
Articles: These are short articles, much smaller in scope than those of the TWC/MZC/MZS products. Originally, they were marked with the title TWM(Number), but in the second wave, these are changed to MZM(Number).
TWM1 - Diamond Eyes: A True World Tale of Betrayal is mostly a worldbuilding article, focusing on how Shar was responsible for Quotal exiling himself from Maztica.
TWM2 - Fangs & Feathers: A Book of Spells for the True World is self-explanatory. The content of this article was folded into the MZC1 version of the Maztica Campaign Guide.
TWM3 - The Grand History of the True World is an intended overview of Maztican history, similar to the Grand History of the Realms. The content of this article was folded into the MZC1 version of the Maztica Campaign Guide.
TWM4 - The Penguinfolk is one of the weirdest books in this product line; it adapts the Dohwar, the Star Trek: TNG Ferengi of Spelljammer, as race now living in Maztica, descended from crashed 'jammers.
TWM7 - Wyrms of the True World: Acalanahuatzi is an article in the vein in the "Wyrms of the North" articles from Dragon Magazine, covering a legendary dragon of Maztica. This one has been updated as its own 2nd wave product; MZM2 - Acalanahuatzi, the Wyrm at War.
TWM8 - Weaving Pluma & Shaping Hishna: Magic Items of Maztica is... yeah, the title says it all, I feel. The content of this article was folded into the MZC1 version of the Maztica Campaign Guide.
MZM1 - Teoatl Magic is the first product to be released for the 2nd wave article series. This book introduces a 3rd branch of native Maztican magic; Teoatl, the coastal analogue to Pluma and Hishna.
Adventures: Originally, these were designated with the header TWA(Number), but 2nd wave updated versions are headered MZA(Number) instead.
TWA1 - The Ruins is an adventure inspired by the horror movie of the same name.
TWA2 - The Curse of Zarzumotl is essentially a Maztican analogue to the original B4: The Lost City. This adventure has been updated as a 2nd wave product (MZA2).
TWA3 - Blood Offering is a Maztican vampire adventure, with inspiration from the movie "From Dusk 'till Dawn" and the book Obsidian Butterfly. This adventure has been updated as a 2nd wave product (MZA3).
TWA4 - The Siege of Heroika is a tie-in to the Esmeralda subsetting from the 1st wave. In its own words, it's a very short adventure outline, more an introduction to Esmeralda than an adventure proper.
TWA5 - Resistance! is a tie-in to the Esmeralda subsetting from the 1st wave. It revolves around the village of Makarondo, newly reconquered by the Dragon Empire, and currently subject to both the normal political turmoil and supernatural meddling.
TWA6 - The Relic is much the same as TWA1; an adaptation of a horror movie by that same name.
In addition to the above, there is also the TWR quartet; a campaign of four linked adventures (in order ) that were updated and republished as a single compiled version in the second wave - this version is simply MZA4 - The Mother of Life.
MZA1 - Creature Features in the Jungle is a collection of three horror-movie inspired adventures; updated versions of TWA1 and TWA6, plus the new "AvY" adventure, inspiored by the Alien vs. Predator film.
Planes: These two splatbooks are intended to flesh out the planar cosmology of Maztica, although they have kind of fallen on the backburner. They are marked by the designation MGP(Number), and there doesn't seem to be any plans to change it.
MGP0 - The Great Pyramid is the introduction to the Maztican cosmology, which replaces the World Tree/Great Wheel for Maztica campaigns.
MGP1 - Xibalba is the Maztican analogue to Hell as the Lawful Evil plane of the Great Pyramid.
