Now I know what I want from the brain, the beholders, but I need monsters for the heart & the stomach, and they cannot be the same member of the beholders family tree(main family and get something up. Alternative brain monster: Mind flayers. Make the brain an actual elder brain.
For the stomach: oozes, possibly, as all they really do is devour things. You could reskin them as living stomach acid.
For the Heart: Not sure yet. Possibly something to do with blood? I might reply later if I figure it out.

Very original idea for this deity, I like it a lot!
For the stomach you might consider a froghemoth. They are able to swallow two creatures at a time and keep them in their stomach.
For the heart you might consider this homebrew blood elemental that JonathanStark made.
