I typically go with shades of yellow to gold because blues tend to prefer deserts.

Well, in the Monster Manual art it has yellow eyes.
I thought they were just glowing white. Honestly, the eyes are so small it is hard to tell. Plus all the blue of the Dragon will make white look yellow because our eyes are dumb.
All stars fade. I'd go white, gold, red, or orange so it looks nice.
EDIT: The one in the MM has green eyes.
I think, going back to DxJxC's comment, I perceived them as yellow because eyes are dumb and I subconsciously perceived the green as yellow because it was surrounded by blue, so the yellowish aspects of the green stood out more in comparison.
Well other dragons, such as Red, Silver, and Gold, eyes fade to the color of their scales. For example the entry for Red Dragons is the pupils fade with age till their pupils resemble orbs of molten lava. So you could do something like that, or whatever suits your fancy.
Of course different dragons will have different eye color, but I like to think of a blue dragon with silvery-white eyes, and when it gets mad there are little sparks of electricity visible in its eyes. Because blue dragon - lightning - you know.
I just think that'd be a cool visual effect.

They do not have a standardized eye color then?

Nothing in D&D is standardized. You can change whatever you want at your table to tell the story you want to tell.

I'm fairly certain there's never been a blue dragon with red scales, but I still see your meaning.

For what it is worth, the half blue dragon Langdedrosa Cyanwrath (whose eyes you can see easily) has yellow eyes.
