I'm curious as if it is possible for my character (Dragonborn Wizard Lv. 1) to use multiple spells of various schools or just one school in particular?
The only mechanics attached to the schools of magic are the Death domain's features that work with necromancy spells and the features of the 8 Player's Handbook arcane traditions that work with spells of the appropriate school. In other words, you can use spells of any school.

I know in 3.5e there was a mechanic where wizards specializing in one school also had an opposing school they could not take spells from, but 5th edition has no such restrictions.

Yes, you are in fact able to use spells from multiple schools of magic, as long as you can use them at that level.
Creatin Varied Characters for no reason except to make my players go CRAZY.
