I am playing in a low magic campaign with character (sorcerer) who lives in a small village where magic is misunderstood and very frowned upon. She lives in fear of what will happen when they find out and keeps quiet and very reserved.
I will be playing her as very quiet is towns but chatty and optimistic when with the party as they know about her abilities. Almost like a kid when they endlessly talk and ask questions.
If so, I'd highly recommend the Aberrant Mind Sorcerer, because you get additional spells and the Psionic Sorcery feature at L6 lets you cast those additional spells directly from Sorcery Points, without needing any verbal, somatic, or material components... free subtle spell on those spells, which is great for a setting where you need to hide your magic as much as possible.
If permitted, you might consider being a Hill Dwarf, using the Tasha's Cauldron of Everything variant ability scores so you can put them in Constitution and Charisma. The +1 HP per level from the Hill Dwarf is really nice for the Sorcerer's low hit point pool

You will definitely want Subtle metamagic once you get to level 3, so you can cast spells without being noticed
Aberrant Mind is a strong subclass, but in general psychic spells are good damagers for this kind of character as opposed to ones that are a little "flashier". A mind sliver isn't going to accidentally set something on fire the way a fire bolt might. Illusions like disguise self can also come in handy if not being discovered as a caster is a priority
In a broader sense, you may want to focus on spells that buff or aid the rest of the party, rather than being a classic blaster and dealing the damage yourself. You can still have a fireball in your back pocket for emergencies, but spells like enhance ability, vortex warp and haste might get more use in situations where you have to keep your powers hidden
