Well, my favorite combination so far has been Rogue and Knight. The combo to me is fun to use because in the unfortunate occasion that I fail a stealth roll. I am able to challenge and make it difficult for my target to try and retaliate. That and it's just fun to be a walking contradiction: IE: A rugged knight.
In my current game, our DM has (unfortunately) blessed my character with a trait that allows her to gain a level when anyone else in the party gains a multiclass. The current count on her classes: I think at least 8-10 classes. Half of which are unused.
I'm playing a War Cleric/Fighter currently. GWM and war caster is a lot of fun.

I've always had an awesome idea for a Drow Way of Shadow Monk/ Assassin Rogue (With some Warlock and Fighter added too, naturally), however have not had the opportunity to play him yet.
Inquisitor (Homebrew Rogue with cleric spells - ala Arcane Trickster.) As a class feature, I get to add Wis Mod (+5) on top of Dex Mod (+6) for Init (+11). And with the UA Ranger, I get advantage on Init rolls. I almost ALWAYS go first. It's loveley :)
The Bard/Ranger (Revised - UA) I'm playing now is awesome fun. Originally just a Valor Bard, he was inspired by the heroism he was witnessing and singing of to become something more. Running with a Dueling + shield combo, War Caster + Mobility feats. Feels like I have good HP, high AC, high utility, decent damage & insane movement.
He has a lot of the cool ranger things by now, like Primeval Awareness, Natural Explorer & Hunter's Prey whilst having Bardic Inspiration, a fair few Bard spells and Song of Rest at his disposal. Fortunately his Valor Bard was low enough level when he switched into Ranger (Hunter Conclave) that their Extra Attack did not overlap.
He really feels like the ultimate jack-of-all-trades.
I'm really happy with Paladin / Mystic (Avatar) or Fighter / Mystic (Immortal). Start off with your melee, then add a level of Mystic, and bounce back and forth until you're at 5/5, and then stick with melee from there on out. You end up with a very capable melee character who can pull some very surprising versatility out of his kit.

My personal favorite is Sorcerer/Warlock. The extra spell slots per short rest from the warlock is nice for sorcery points and hex + eldritch blast + agonizing blast, as well as metamagic makes it super awesome. I really can't wait to get to sixth level with my current character to get my metamagic (he's 5th level currently). The above combo is loads of fun...I just can't wait to twin it haha
Rogue/Bard seems almost redundant given how jack-of-all-tradesy they both are, but it's actually a nice synergy depending on what kind of character concept you're going for. Dunno if it's my fave multiclass combo, and def not the most overpowered or anything, but I do like it a lot of late.
Most OP might be Warlock/anything else tbqh, just for flavour I like Warlock/Sorcerer a lot
I got my bard/warlock right now, it's really the only multi-class I have, and the current level spread is bard 6/ warlock 2. The level 3 boons wouldn't help my bard enough to continue in warlock, so I'm all about the bard life. I also use spells out of a pdf book called "The (not really) Complete Spellbook", which has some 3.5 spells changed to 5e; and let me tell you how powerful some of the 4th level bard spells are! Searing Song lets me melt flesh with music...
Rogue 15/Fighter 5 with two weapon fighting style and dual wielder feat would be good. You can make three weapon attacks which do 1d8+5 each and add 8d6 SA damage versus 1d8+5, 1d8, and 10d6 SA. If your fighter archetype is battle master, you can add in a bunch of fun effects on your attacks.

I have yet to try multi classing myself. Bard and Paladin are my favorite classes does anyone know if these two make a decent combo?

Bard/Dervish was my all time favorite. Speaking for another friend, he loved his Rage Mage [Barb/Warlock I'm pretty sure]

Oath of Ancients Paladin and either Bard or Archfey Warlock are both really fun combos both conceptually and mechanically.
^Shadow Monk + Assassin Rogue is a really fun one as well. Who doesn't want to be a ninja?

I am paladin 1/ warlock 2 right now and really like how they complement each other.

Yeah Warlock is definitely a great go to for Multiclassing imo.

Without UA, anything that use some of those classes: fighter, paladin, rogue, warlock or sorcerer.
Unfortunately, some multiclass don't work if you start at lvl 1
You can make it work. Just gotta plan ahead
Lvl. 1 is the best place to start because you can see the road ahead and get to enjoy hitting those milestones.
