So I was toying with the idea of making a character inspired by That Time I Got Reincarnated as a Slime - Hakurou. Looking at the idea of making it Monk (Way of Kensei) Ranger (Fey Wanderer). I am totally stuck at picking a race that fits for the Kijin, any thoughts?
There really isn't anything that fits terribly well, since like most shonen titles, the power level in Reincarnated as a Slime is considerably higher than in D&D- even the lower level named monsters in Reincarnated as a Slime have stats that would be in the 20s in D&D terms. You could honestly pick nearly any race you want.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
I don't really know what it is but from the title I guess you could be a Plasmoid. They are literally blobs that can reshape themselves with a hell of a lot of versatility and player ideas e.g. Amorphous.

Goliath fits as a race, and you could use Tasha’s rules to make those stats fit anything.
If you wanted to play further into being an Oni, you could ask your DM if you can take the Giant Foundling background for the Strike of the Giant feat: Hill Strike makes sense for a Swordman and essentially an Ogre (Hill Giants feel the most closely related).
Oooh if appearance rather than flavour is your concern you could be a Tiefling (and then you can be an old man with white hair and horns)… and them demonic blood thing can also fit with being an Oni just as much as a Giant does (points for both through background)
Samurai fighter is worth a look. But if you specifically want a Dex based Longsword then yes Kensei monk would do the job nicely.
For the Race I finally settled on Eladrin, mostly for the match up of abilities for it against the character. I guess I just liked the fit and what it produced.
I do not know the reference but going my the title plasmoid is the one race that can be played as slime.
Reincarnate is a high level spell and RAW can not result in a plasmoid but this 8s mainly because the spell came before the race. Plenty of DMs have homebrew tables so reincarnate can result in any playable race.
Why a high level spellcaster would reincarnate a level 1 character (or pre level 1) is up to you, a warlock patron is one route but it seems you do not want to go that way.
OP was not talking about the main character (Satoru Mikami) who was reincarnated into a slime in a *non DND* setting (he died in Japan and it's an isekai anime). He was talking about a warrior.
You are correct that you cannot be reincarnated from or to a non humanoid in DND 5e.

Kijin are a manga's interpretation of the Oni legend, also known as Ogre-magi.
Oni are in the monster manual, page 239. They are a CR 7 Giant.
