So I'm playing a vl 7 way of shadow monk, 5.5e. Up until this point, I've done nothing but unarmed strikes, however we have a level up coming up (2 per year) and I'm starting to think about a possible multiclass.
In my digging, I saw the monk/fighter combo, which looks really tempting. (Mainly for action surge.) But that led me to seeing ways to get about 8 attacks in one turn, using the attack action + extra attack + nick property on a dagger, bonus action for 2 more (3 once I reach I think lvl 10 or smth monk), action surge for two more attacks since nick is once per turn.
I'm certain that's correct, except for nick. This monk is the only 5.5 character I've played, so i haven't used weapon propertly things literally at all. Is that the correct way to use nick? COuld i have been getting three attacks every time I take the attack action?!
please advise. And if you hve any tips or suggestions regarding the multiclassing, please advise.
You have that right. At a minimum of Fighter 2/Monk 11 you could make 8 attacks: 3 with your first Attack action thanks to Nick, Action surge then the Attack action again for 2 more, then Flurry of Blows for 3 more. I have seen this done with a Bugbear Monk to get an extra 2d6 on each attack during the first round, and it can make for a pretty banger nova round. It works really well on a Warrior of the Open Hand if you use Flurry of Blows first to knock them Prone so you can have Advantage on all your attacks after you do.
What Ace said, but also, it’s my understanding that the dagger/nick can be used in the ‘offhand’.
Actually, the rules dont specify "hand"edness. They do require at least 2 different weapons.
In the most extreme case, rosie can hot swap 2 scimitars in one hand, leaving the other hand free. Normally, id say this is a good place to put a shield, but for a monk, they could leave their other hand free for grappling, unarmed atrikes,.whatever, and the other hamd could hot swap 2 scimitars.
So at level 10, with Extra Attack, you could Action: attack scimitar1, extra attack scimitar1, hot swap, light attack scimitar 2. Bonus action flurry of blows: 3 unarmed strikes with your other hand

Yes Nick grants one additional attack per round for a monk. However the question when multiclassing is always whether it is worth it?
And the answer to that can depend a lot on the game structure / DM. For instance if you have +1/+2 Handwraps of Mighty Blows it might not be worth it, because the Nick attack and the triggering attack will not benefit from those magic item benefits. You'll also need to pick up two-weapon fighting to make the Nick attack damage add your DEX modifier. But if there are no magic items in the game or there are lots of them such that you can get the same bonus to your two weapons that might not be a concern.
You'll also be delaying your level 8 ASI, which might be a +1 to accuracy/damage to all of your unarmed strikes, a +1 bonus on 4 attacks per round is more than an additional 1d8 attack. You're also delaying the +1 attack on Flurry of Blows that monk gets a level 10.
But it depends on the game style, if you get a short-rest between every combat, and combats usually last only 3 round then Action Surge is about as good as that +1 attack on Flurry of Blows. But if your combats last 5-6 rounds you'd have been better off going for Monk-10.

Also, if your monk has to use unarmed strikes for any of their features, you will have to do some weapon swapping. To stab then punch

Weapon swapping isn’t called for- unarmed attacks can be kicks or elbow strikes- there’s no hard requirement for an empty hand.

You do need to use weapons to use weapon masteries like Nick. You can't use the properties of a weapon you're not using.

And for Nick in particular (and the whole light weapon attack complex in general), you need to use two weapons. Unarmed attacks won't cut it.
So hot swap two different weapons for the light/nick,/2wf/dw rosie the rivetter combo, and kick with your feet for the monk unarmed strikes.
