I'm looking to build a character with emphasis on stealth, sneak attack, and control spells. Obviously Arcane Trickster is a simple choice, but I also really like some of the Assassin subclass perks. Thoughts on whether to go full Rogue/Arcane Trickster, or Rogue/Assassin with a Wizard dip?
I think it really depends on what you like about the assassin subclass and what kind of assassin you want. If you want to surreptitiously sneak poison into someone's cup, then arcane trickster is a better choice. If you want to end a fight before it starts, then the assassin subclass is better.
The assassin subclass is the only way to get proficiency in the poisoner kit, but any arcane trickster can get disguise self and if you take the actor feat you're ~90% of the way to the assassin level 9 feature.
The arcane trickster subclass is the only way to get an invisible mage hand capable of sleight of hand, but any assassin (with >13 charisma) can dip 3 levels into warlock to get an invisible imp/sprite also capable of sleight of hand.
So I guess I'm trying to say that it really depends on the specifics of what you are trying to achieve.
I would probably suggest having a look at a possible combo between Rogue Assassin and Bard College of Whispers. The Bard spell selection is a bit more versatile than the Wizard one and offers plenty control/charm spells, and the Whisper college can help you improve your deadliness.

I forgot about the skilled and prodigy feats. I don't think I've ever considered taking skilled because I don't think it's a great feat when compared to lots of the others. I forget about the tool proficiency in prodigy because I think it's a tertiary benefit to that feat.
Variant human only allows poisoner's kit proficiency if you take one of the feats. Half elf and variant human only allow for gaining proficiency with skills not tools. The rules for customizing a background only allow taking tool proficiencies found in the sample backgrounds. Poisoner's kit proficiency isn't found there.
Aereni elves, githyanki, changeling, Warforged envoy races can all get poisoner's kit proficiency from racial features. Any background that gets a tool (not taken from a list of instruments or artisan's tools) can get poisoner's kit proficiency. And any class/race/background combination can take the skilled feat.

More options keep showing up. I just looked through the list and didn't see any backgrounds that offer tool proficiency without explicitly saying artisan tool proficiency. I did however see that the Golgari agent background gives poisoner kit proficiency.

So you could have a rogue with the urchin background and replace the thieves' tools proficiency of the urchin with any other tool including poisoner's kit.
The assasins abilities dont' always work well with a larger group - it's kind of a trap class once you or the DM realizes how it works. If all your group is stealthy and you surprise the enemy often it works, but otherwise....Rogue Trickster looks better.
