I get the 20 Dex and Cha. That means starting with two 18s. That happens not too infrequently when rolling. I don't think I would play a character that I rolled two 18s for because of this exact situation.
What I'm confused with is how you're calculating AC. Shouldn't you only get 13 + dex? Also, how do you have permanent flight?
As for a suggestion, it depends on what you want. Maybe go rogue with either scout or swashbuckler and take advantage of things like shadow blade.
I’ve had it happen a couple of times too. That’s what happens when you’re rolling 4d6 and dropping the low die and your DM has a house rule of re-rolling if you don’t have high enough scores when you roll.

I have seen another player with 4d6 roll 3 18's and a 17, and 16 lowest roll was a 12 it can happen the dice gods were with him that day, or he sacrificed a bucket of KFC.
I have a level 8 Half Elf Fire Draconic Sorcerer, and I don't know where to go from here.
He gained permanent flight, and has 20 AC, dropping fireballs and taking hits like a champ with 25 AC on shield.
He frequently uses deception, stealth and overwhelming flame attacks.
I’m considering multi-class Evocation Wizard for bonus spells and safe fireballs, but Level 5 Spells and 7 potential fireballs sounds cool too. Help?
Bonus info: Has a spy background, is an abberition, 9 STR, 20 Dex, 14 Con, 13 Int, 12 Wis, 20 Cha
I'd consider Warlock. Access to some really cool spells like Hellish Rebuke and Armor of Agathys, not to mention Eldritch Blast. Eldritch Invocations add a lot of cool effects and utility options. Level 3 take Pact of the Chain for an upgraded Familiar, or Pact of the Blade for weapon attack options and curse options. And since Warlocks use Charisma for their casting stat, it meshes perfectly mechanically.
However, the bigger question here is what motivation your character might have for pursuing a pact of servitude to an eldritch being of unfathomable power. Would it make sense for your character to do this? How would they even encounter this being to form the pact? And what patron would make the most sense for your character, their backstory, and the present situation in the campaign?
Curious as to how your character is built. Even with Draconic Resilience and 20 Dex, you should only have 18 AC. Do you have Bracers of Defense? Also you don't get your wings until level 14, so how do you have permanent flight?

You've given little indication of what you enjoy in a character so it's pretty difficult to give good advice. All we really know is that you have a god tier character that you're looking to multiclass for some reason. Maybe it's because you already have permanent flight so continuing in sorcerer doesn't give you as much, but we don't know.
FWIW there's nothing wrong with just staying a sorcerer. If you're looking to transition into a different role, fighter or rogue could be good. If you're looking for more blasting, warlock could be good too. Wizard and bard are your only other options without DM fiat, but I don't see a whole lot of synergy there (maybe more creative players do see something).
Edit: I have access to a 1d8 magic arm sword, can be used as a bonus action, proficient shortsword.
I have decided to take him to 9.
Going to be using a combo of twinned greenflameblade (+5 with Elemental Affinity) and quickened shocking grasp when people get close, grabbing telekinesis for a bunch of reasons, and will still be dropping scorching and fireball when called for.

I hope you are not using a shield to get 20 AC. If you use a shield without proficiency it prevents you from casting spells.
Also, can you link the character? I want to know where you are getting permanent flight before level 14.

I say take 2 or 3 levels of (celestial) warlock or paladin and still go 17 levels sorcerer (get level 9 spells).
Celestial warlock or any paladin get access to some healing magic.
Pact slots can recharge sorc points on short rest. Pact boon and invocations offer lots of options. Divine smite for melee damage.
Without DM fiat, you need 13 Strength to multiclass into paladin. I love a Dex paladin though and would totally allow it in my game.
