Unfortunately, you can't. The character builder does not support UA content.
There was a time when it did, but a couple years ago they decided to stop implementing UA content because it required a lot of time and effort to implement things that tended to change rapidly or even be completely discarded during the playtesting phase.
The short version is, you don't. Once upon a time they used to integrate the UA, but they stopped, probably due to level of effort for test content. You can try to add it as homebrew if you don't want to use a paper character sheet.

I feel like I'm missing something - how do you get the character builder in Beyond to let you use UA content?

you would need to make the homebrew, or just look at sheet and make rolls.
1: Download the UA PDF.
2: Download the PDF character sheet after naming your character in the builder leaving everything else blank.
3: Fill out the character sheet PDF manually using the UA PDF as a guide.
