Am I really the only one that is baffled why we don't have a properly playable subclass for every magic school? Why drag your feet on this? Anyone have an answer that isn't depressing?

Because they’re still working on the rest of the book the subclasses will come with, plus changing the subclasses based on what people said about them. It hasn’t even been that long since the unearthed arcana was up.
